Carrot and cream cheese cupcakes

 
•175g brown muscovado sugar 
•100g wholemeal self-raising flour 
•100g self-raising flour 
•1 tsp bicarbonate of soda 
•2 tsp mixed spice 
•zest 1 orange  
•2 eggs 
•150ml sunflower oil 
•200g carrots, grated 
•orange coloured sprinkles, to decorate 
Icing 
•100g butter , softened 
•300g soft cheese 
•100g icing sugar, sifted 
•1 tsp vanilla extract 
 Bake 20 - 22 mins
 Makes 12
  1. Heat oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with cases. In a large mixing bowl, mix the sugar, flours, bicarbonate of soda, mixed spice and orange zest. Whisk together the eggs and oil, then stir into the dry ingredients with the grated carrot. Divide the mixture between cases and bake for 20-22 mins until a skewer poked in comes out clean. Cool on a wire rack before icing.
  2. For the icing, beat the butter until really soft, then beat in the soft cheese, icing sugar and vanilla. Use a palette or cutlery knife to swirl the icing on top of the cakes, then sprinkle with decorations.

Morkų keksiukai su kreminio sūrio glaistu

•175g rudojo cukraus
•200g miltų
•2 šauksteliai kepimo miltelių
•1 valg. š. sodos
•2 val. š. prieskonių mišinio
•1 apelsino sutarkuota žievelė
•2 kiaušiniai
•150ml saulėgražų aliejus
•200g morkų
•Puošybai oranžinės cukraus drožlės arba 1 apelsino tarkuota žievelė
Glaistui 
•100g minkšto sviesto
•300g kreminio sūrio
•100g cukraus pudros
•1 valg. š. vanilės ekxtrakto
Ismaišykite sviestą iki purumo, sudėkite kreminį sūrį, cukraus pudrą ir vanilės ekxtraktą. Viską sumaišykite ir atšaldykite.

Orkaitę įkaitinkite iki 180°C temperatūros, sudėkite keksiukų popierines formeles į skardos duobeles.
Pirmiausia paruoškite glaistą keksiukams. Atšaldykite.
Tada dideliame dubenyje sumaišykite cukrų, miltus, sodą, kepimo miltelius, prieskonių mišinį bei apelsino žievelę.
Atskirame inde išplaktite kiaušinius su aliejumi, mišinį supilkite į sausų produktų mišinį.
Suberkite sutarkuotas morkas.
Viską sumaišykite į vientisą masę.
Masę išdalinkite po lygiai į keksiukų popierines formeles.
Kepkite 20 – 22 minučių.
Iš šaldytuvo išimkite jau paruošta glaistą. Užtepimui naudokite serviravimo peilį. Apibarstykite tarkuota apelsino žievele arba oranžinėmis cukraus drožlėmis.

Kaip pasigaminti prieskonių mišinį:
1 valg. š. malto cinamono
1 valg. š. malto muskato
1 valg. š. maltų gvazdikelių
1 valg. š. maltos kaliandros
1 valg. š. malto imbiero

Visus prieskonius sumaišyti ir laikyti sandariame inde. Šių prieskonių mišinį galima naudoti ir kepant imbierinius sausainius.

The Princess and the Mouse (as meatloaf)

 


   Once upon a time in the desert there lived a princess named Safia. One day, a wicked magician disguised as an old woman approached Safia.
      “Princess,” he croaked, “let me be your washerwoman and clean your sheets.”
     “Certainly,” said Princess Safia, who wanted to help the old woman. “Come to my rooms and I will give you my sheets to wash.”
   So the disguised magician followed the princess. In the blink of an eye, he stuffed her into a laundry bag and ran away as fast as he could. Using an evil spell, he made her as small as a doll and put her away in a cupboard.

   The next day, the magician found the palace in an uproar.
      “Princess Safia has vanished” said the grand vizier.
   The wicked magician smiled at his success.
  The next day, the queen was weeping in her garden when the magician entered, disguised as a washerwoman. He put her into a laundry bag and turned her into a doll no bigger than his thumb.
   The next day he captured the king in the same fashion, turned him into a doll, and put him in a cupboard with his wife, the queen.
   The grand vizier pleaded with the magician, “Please tell us what to do!
      “Until your king, queen, and princess return, let me be your ruler,” said the magician. The people agreed. So the wicked magician began to rule, feeling confident that the royal family was locked away forever in the cupboard.

   But one day a mouse nibbled its way into the cupboard where Princess Safia was hidden.
      “Mouse,” whispered the tiny princess, “eat a hole in this cupboard and let me out. My father is the king, and he'll reward you.”
     “Haven't you heard? The king and queen have disappeared,” said the mouse. “The magician is now the ruler of all the land.”
     “I can't believe it,” cried the princess. “Can the wicked magician have captured them too?”
   Together, they searched the cabinet and found the king and queen stuffed into the top shelf. But they were as stiff as wood, because the magician had cast a different spell upon them.
     “Princess,” said the mouse, “tonight when the moon rises, come with me to the wise woman who lives in a hollow tree. She will be able to help you.”

   So, when the moon rose, they hurried to the hollow tree and climbed in.
     “To save your family,” said the wise woman, giving the princess a magic grass seed, “you must find an orange-colored horse by the crossroads. Give him this magic grass seed to eat, and whisper into his ear, ‘Take me, Orange Horse, to where the sacred pear tree grows, so that I may pick the pear from its topmost branch.’”
     “And then will I grow back to my regular size?” asked the princess.
    “Not until the wicked magician is dead,” said the wise woman. “Ride to the Well of the Green Ogre. Drop the pear into the well. The magician's soul is in the pear, and if it is devoured by the ogre, the magician will die.”
     “What will happen then?” the princess asked.
     “All the creatures turned into other shapes by the magician will return to their original forms.”
   The princess thanked the wise woman and ran until she reached the crossroads where there stood an orange horse.
    “Take me, Orange Horse,” said Safia, “to the tree where the sacred pears grow, so I can pick the topmost pear from its branches.”
   The horse put down his head. Safia fed him the magic grass seed and then climbed on. The horse galloped away.
   They arrived in a beautiful orchard with a single pear tree. She climbed into the branches and picked the pear from the topmost branch.
    “Now, dear horse, take me to the Well of the Green Ogre,” she whispered in the horse's right ear. The horse galloped off and soon they reached the well.
   Inside the well, Safia saw an ogre's head, as big as a wagon wheel. She took the pear and dropped it right into the Green Ogre's slimy, smelly mouth, and he instantly chewed the pear into bits.
    Safia then found herself growing back to her own size. That meant the wicked magician was dead!
    Safia hurried back to the palace, where she found the king and queen, who were their normal size again.

    Safia went to the hollow tree to thank the wise woman. But the tree was gone! Instead, she saw a tall handsome young man dressed in regal clothing.
     “Dear Princess,” he said, “the wise woman is gone.”
     “How do you know this?” demanded the princess.
     “I was the mouse, another victim of the magician's enchantment.”
     “Come with me to my father so that he can thank you,” said Safia.
   Together they went, and the young man knelt before the king.
     “Please stay here and marry my daughter,” said the king.
   So they were married in a wedding feast attended by thousands, and they lived and ruled happily ever after.


Preheat the oven to 180C/350F/gas mark 4

Makes 5 mouse-meatloafs

Cook time 45 min

800g mince meat
2 onions
2 eggs
1/2 cup crushed crackers
1 cup milk (you can also use water)
3 garlic cloves
1/2 tsp salt
1/2 tsp pepper
1 carrot for decoration

•pour milk over crushed crackers, allow to soak until crackers will be soft and no milk left
•chop onions and garlic, mix with mince meat
•add eggs
•place soaked crackers into the mince meat, mix
•add salt and pepper and mix it well
•form into oval shapes
•chop 2 round pieces of carrot, cut them into triangles to make ears, also cut carrot lenghwise to make a tail

Camera obscura feat. Black bottom cupcakes




Cream Cheese Filling

  • 16oz cream cheese (room temperature)
  • ½ cup sugar
  • ¼ tsp salt
  • 2 large egg whites (room temperature)
  • 2 tbsp sour cream (room temperature)
Cake

  • 1 ½ cups all-purpose flour
  • ½ cup cocoa powder
  • 1 ¼ cups sugar
  • ½ tsp salt
  • 1 ¼ tsp baking soda
  • ¾ cup sour cream
  • 1 1/3 cups water
  • ½ cup butter (melted and slightly cooled)
  • 1 tsp vanilla extract
Preheat oven to 350F.

Line two 12-cup muffin tins with paper liners.

In a medium bowl, make cream cheese filling. Beat together cream cheese, sugar and salt until smooth. Beat in egg whites and sour cream. Stir in chocolate chips and set aside.

In a large bowl, whisk together sugar, salt, flour, cocoa powder and baking soda. Make a well in the centre and add in sour cream, water, butter and vanilla. Stir together until just combined and no streaks of flour remain. Divide cake batter evenly among 24 cupcake liners. Top each portion of batter with 1 rounded tablespoon cream cheese mixture (You might not use all of the filling).

Bake for 20-25 minutes. Rotate pans halfway through baking if you are using two racks. A toothpick inserted into the side (cake only part) should come out with a few moist crumbs on it when the cupcakes are done.

Cool in pans for 5 minutes. Cream cheese filling will sink slightly. Remove to wire racks to cool completely.

Yield: 12 cupcakes

  • 450 g. Philadelphia sūrio
  • ½ st. cukraus
  • ¼ arbat. š. druskos
  • 2 kiaušinio baltymai
  • 2 valg.š. grietinės
Keksiukams:

  • 1 ½ st. miltų
  • ½ st. kakavos
  • 1 ¼ st. cukraus
  • ½ arbat. š. druskos
  • 1 ¼ arbat. š. sodos
  • ¾ st. grietinės
  • 1 1/3 st. vandens
  • ½ st. ištirpinto, truputį atvėsusio sviesto
  • 1 arbat. š. vanilės ekstrakto
Orkaitę įkaitinkite iki 180 C, kepti 20 - 25 min

Pasiruoškite 12 keksiukų tinkamą skardą, išdėliodamos ją popierinėmis formelėmis.

Pirmiausia pasiruoškite įdarą mikšto sūrio įdarą.
Vidutinio dydžio dubenyje sumaišykite Philadelphia minkštą sūrį, cukrų, druską, kiaušinio baltymus ir grietinę. Maišykite tol, kol pasidarys vientisa masė. Pagamintą įdarą atšaldykite.
Dideliame dubenyje pasidarykite keksiukų tešlą sudėdamos kartu cukrų, druską, miltus, kakavą ir sodą, tuomet viską išmaišykite. Visus sausus produktus sudėkite į sietelį ir išsijokite.

Atskirai dubenėlyje susimaišykite grietinę, vandenį, sviestą bei vanilės ekstraktą, tuomet jau sumaišytų sausų produktų viduryje padarykite vietos ir sudėkite atskirame indelyje sumaišytus produktus.

Paruoštą keksiukų tešlą išdalinkite po lygiai į keksiukų popierines formeles.

Paimkite anksčiau pasiruoštą sūrio įdarą ir ant kiekvienos keksiukų porcijos uždėkite šaukštą sūrio įdaro. Taip pat galite vietoje šaukšto naudoti konditerinį švirkštą, į kurį pridėję sūrio įdaro, įleskite į keksiukų tešlą, tuomet sūrio įdaras išliks labiau keksiukų viduje. Pastaba: gali būti, kad nesunaudosite viso pasiruošto sūrio įdaro.

Cafes, libraries in arty Providence with traditional chocolate brownies

 
it took me some time but eventually i came round to go through beautiful Providence photos -

rainy and cold January day, oh winter joys!

Providence reminded me of the European cities indeed, just as A. said

the weather didn't make us smile but the little cafes, cozy libraries and museums were our escape from the gloomy wintery weather, to get warm with a nice cuppa and a slice of cake :)

 
 
 

chocolate brownies are an all-American classic

in crumbly and cakey style!


 

Makes about 12 squares

200g dark chocolate, roughly chopped
175g unsalted butter
325g caster sugar (this is a whopping amount of sugar which probably makes that traditional turn.. but I've only used 150g)
130g plain flour
3 eggs
icing sugar, to decorate

•preheat the oven to 170C/325F/Gas 3
•melt chocolate and butter
•add the sugar and stir until well incorporated, add flour
•stir in the eggs and mix until thick and smooth
•spoon mixture into the prepared baking tray (33 x 23 x 5, lined with greaseproof paper) and bake in the preheated oven for about 30 - 35 minutes, or until flaky on the top but still soft in the centre
•leave to cool compltetely before dusting with icing sugar, to decorate

april showers, Kinfolk & bran flake snack


sunny and rainy Saturday afternoon left me wondering what's going on with the weather? sunshine and rain were taking turns as it seemed every five minutes.

april showers!

i loved when the sun came out and i loved when it was raining with unexpected hale. that made me put the kettle on for a cup of coffee with the bran flake bar and Kinfolk magazine.


unfortunately i have no particular recipe for the bran flake snack - just go with the flow!

 i used -

•crushed bran flakes or any other cereal you have
•melted butter
•golden syrup
•desiccated coconut or raisins or nuts or chocolate chips - whatever you'll find in the cupboard
•melted chololate could be used instead of golden syrup or with golden syrup for firmer consistency

mix everything, place in the baking tray that's been lined with baking sheet and chill for few hours.

Heart shaped pancakes with blueberries

American pancakes...



 
 


 Pancake recipe -
  • 135g/4¾oz plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp caster sugar
  • 130ml/4½fl oz milk
  • 1 large egg
  • 2 tbsp melted butter or olive oil, plus extra for cooking
 how to -
  •  Combine flour, salt, sugar, milk and egg, and mix thoroughly
  • Stir in melted butter
  • Put a little bit oil to a hot pan, add a ladle of batter (or two)
    Use silicone egg fried forms to get the heart shape pancakes
    Place it in the pan and pour the batter inside the wanted silicone form

Sugar Easter Bunnies on a boat


      Makes 35  
      Preparation: 15 mins
      Bake: 10mins

  Very basic cookie recipe -  
  • 225g butter, softened
  • 110g caster sugar
  • 275g plain flour
  Preparation -      

You could also add extra ingredients to you cookies -
  •  Poppy seed: 2 tablespoons of poppy seeds to the flour. 
  •  Lemon: finely grated zest of 1 lemon.
  •  Orange: finely grated zest of 1 orange.
  •  White chocolate and orange: Dip the tops of the orange cookies in 50g of melted white chocolate, then allow to set on greaseproof paper. 
  •  Spices (cinnamon, mixed spice, ginger): 1 teaspoon of a ground spice to the flour. 
  •  Double chocolate chip: Use 250g plain flour and add 50g sifted cocoa powder to the flour. Bring the dough together and mix in 125g dark or white chocolate chips.

  2. Dideliame dubenyje issukite sviesta iki purumo. Iberkite cukru ir maisykite kol pasidarys vientisa bei puri mase.
  3. Issijokite miltus ir suberkite i dubeni, rankomis suformuokite tesla.
  4. Tesla iskociokite i plokscia mase. Naudokite kokias norite sausainiu formeles
  5. Kepkite 13-15 minuciu kol pagelsves.
  6. Perkelkite sausainius ant groteliu kol dar silti, veliau gali prikibti prie kepimo popieriaus.
Tokius sausainiukus galite pasigaminti su ivairiausiais kitais pagardais:
  •  Aguonomis: 2 valg.s. sumaisyti su miltais. 
  •  Citrina: vienos tarkuotos citrinos zievele.
  •  Apelsinu: vieno tarkuoto apelsino zievele.
  •  Apelsininiai sausainiai su baltu sokoladu: imerkite sausainiu virsu i 50g. istirpinkito balto sokolado, atausinkite padeje ant kepimo popieriaus.
  •  Cinamonu: 1 sauksteli cinamono sumaisyti su miltais.
  •  Sokoladiniai sausainiai su sokolado gabaliukais: 250g miltu sumaisykite su 50g persijotais kakavos milteliais. Iberkite 125g tamsaus arba balto sokolado gabaliuku.
